Taco Soup (a favorite in our home)
Brown one pound ground beef and set to the side.
Combine 1 can of corn, 1 can of black beans, 1 can of pinto beans, 1 can of diced tomatoes, 1 can of olives, taco sauce and 1 package of powdered ranch dressing mix.  Dump all items in a pot with the ground beef, heat through, and you're done!  Serving tips: drain the cans if you want thicker soup, leave the juice if you want it more...juicy.  You can serve with a dollop of sour cream, chips, rice or noodles--whatever you like!  The longer the flavors sit, the better they get--so crock pots work great on this one too!

Cranberry Nut Granola 

3 cups rolled oats
1 cup sliced almonds
1 cup chopped pecans
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons real maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1-1/2 to 2 cups dried cranberries
  Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.  In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for approximately 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add dried cranberries and mix until evenly distributed. Makes 6 servings.

All you busy moms out there, this is for you!  We want to help each other solve the age-old dilema of what to cook for dinner.  So send in your tried and true family favorites and check back often for great ideas from other ladies.  For this challenge we are looking for family dinner ideas that are quick, healthy and most importantly, yummy!  Here is the "challenge" part...we are looking for recipes with 6 or less ingredients, take no more than 20 minutes to prepare (cooking time doesn't count!), and are healthy.  Get out your recipe files and send in your sugestions by clicking here.  We will be issuing new challenges in coming weeks so check back often for more great stuff!

Shoyu Chicken 
   ¾ cup soy sauce, ¾ cup granulated sugar or firmly packed brown sugar, 1 ½ piece ginger- peeled and thinly sliced, 2 cloves garlic- minced , 8 boneless, skinless chicken thighs, Hot cooked rice.   Put soy sauce, sugar, ginger and garlic in a skillet, bring to a boil, add chicken. Cover and simmer on low for 20-30 minutes. Serve with rice.
